Fruit Snow!

fruit snowMona, of Eco Nuts, came up with the idea for this cool treat while suffering through a heat wave reminiscence of the fiery pits of Mordor.

She wanted to cool off fast, but wasn’t craving ice cream and didn’t have much in the way of anything healthy and hydrating foods in her fridge. The refreshing recipe she landed on is similar to granita but without as much effort, and without the added sugars!

This is a simple recipe that’s easy to tailor to your tastes and what’s available. It’s best to make in small portions (especially on a hot day).

Piña Colada Fruit Snow

  • 1-2 cups of frozen fruit (I used 3 frozen strawberries and 1 cup of frozen pineapples)
  • 3 ice cubes
  • 1 heaping tablespoon coconut oil

Put all ingredients into a blender or food processor and blend until the ingredients are approx. the consistency as sand. Serve and eat immediately.

There are endless variations on this recipe, and if you don’t have real fruit available, you could always use juice frozen into cubes. Be sure to try these variations for a sweet, cool treat!

Berry Blast Fruit Snow

  • 1-2 cups of frozen berries
  • 3 ice cubes

Tropical Tango Fruit Snow

  • 1 cup frozen mango (cubed)
  • 1 cup frozen pineapple pieces
  • 3 ice cubes
