I went out of town this past weekend to spend some time with two very awesome friends. I had a wonderful trip and am so thankful for the time away to work, relax and have fun with such great company. It was a wonderful reminder of how uplifting good friends truly are – and reminder to me of how much I love my family at home as well. Sometimes pieces get lost in the day-to-day but it was great to come home refreshed with a little more “me” shining through.
While I was away I rolled into my seventh week of my journey to get fit and healthy. I asked to use my friend’s scale and was blasted with a weight a good ten pounds under what my home scale says. I’m not convinced, but I do know that I will be buying a new scale later today. While the number isn’t the only factor that matters, I must admit that it gave me a little more pep in my step to think that maybe I was a lot closer to my healthy weight than I had originally thought.
In the past week I have also rekindled some of my love for cooking. I like to cook, but I tend to get bored easily so I decided to change up a recipe a little for some new flavor. One of our household favorites is my husband’s Spinach Lasagna recipe. It is so good and the kids just gobble it up. I highly recommend giving it a try. For something a little different, I used some Swiss Chard that we grew and froze last fall along with some mushrooms. It was delicious and a nice alteration of the recipe.
For those of you who are following and joining in with my fitness goals, I slice this lasagna into 8 large pieces in a glass pan, and each is just 333 calories which I think is just awesome considering how filling it is. It would also be easy to reduce that by using lower calorie cheeses in this recipe.
Also, for fun and a yummy treat, I have got into the habit of making Kale Chips about once a week. They are so easy. My only wish is that they lasted longer. I made a full batch before my trip this past weekend, with the intention of taking them with me for the dive, and not a single morsel made it into the car! I have been making kale chips myself lately, and they are out-of-this-world AWESOME! I tend to get stuck in my little comfort-zone box when it comes to cooking/baking, so I was really happy to try something new and actually like it too!!
I am also trying my hand at making kombucha tea and lacto-fermenting sauerkraut, so we will see how that goes!!

Thanks for the recipes, I think my husband will really like the lasagna. Hopefully my picky 2 year old will too:) Never tried Kale chips before, they sound interesting though, worth a try for sure.

Not to bust the bubble, but you should only really get a new scale if there is no difference in weight with your current scale over time. There are a TON of factors that can contribute to the scale number and simply using a different scale at a different time of day can actually be a large enough difference to see 10 pounds.
The recipe ideas are great though!
